Coconut Fettucine Alfredo with Seared Brussels Sprouts & Cherry Tomatoes

This was a meal I’ll definitely be making again. Most of our meal choices end up being delicious, but time-consuming. The beauty of this one was the ~ 30 minute window it took for me to cook it. Behold, Coconut Fettucine Alfredo with Seared Brussels Sprouts and Cherry Tomatoes! 

Seared Brussels Sprouts & Cherry Tomatoes

Coconut Fettucine Alfredo

1 lb dry fettucine
1 tsp olive oil
2 tsp grapeseed oil
3 garlic cloves, minced
2 tsp sun-dried tomatoes, minced
1/4 tsp salt (more to taste)
1/2 tsp ground black pepper
1/4 tsp red pepper flakes
1 tbsp tamari
2 tsp white wine vinegar
1 tbsp nutritional yeast
2 tbsp tahini
1 398-mL can coconut milk
1 tsp lime juice

In a large pot, bring at least 4 L heavily salted water to a boil. Add pasta and olive oil and boil for 6-8 minutes, stirring occasionally. Drain.
Meanwhile, heat grapeseed oil in a pot on medium high. Add garlic, sun-dried tomatoes, salt, black pepper and red pepper flakes and saute for 1 minute. Add tamari, vinegar, nutritional yeast, and tahini. Slowly whisk in coconut milk. Reduce heat and bring to a slow simmer, whisking regularly. When simmering, add lime juice and season with additional salt, if needed. Remove from heat. Pour strained noodles back into pot and stir into sauce.

Seared Brussels Sprouts & Cherry Tomatoes

2 tsp grapeseed oil
20 Brussels sprouts, trimmed and cut in half lengthwise
20 cherry tomatoes
1 tsp balsamic vinegar
salt and ground black pepper, to taste

In a large frying pain, heat oil on high. Add Brussels sprouts and sear, flat side down, for 3 minutes. Add tomatoes and balsamic vinegar. Season with salt and pepper and sauté for another 3 minutes. Pile a portion of pasta in the middle of a shallow bowl. Spoon Brussels sprouts and tomatoes around the edges.
