This one is cheating a bit – technically it wasn’t a Sunday night dinner, but I whipped it up and it was simple and delicious so I wanted to share!
Smoked Tofu and Veggie Stirfry
1 package of smoked tofu (I use Sunrise Soya brand), sliced into strips
1/2 white onion
2 cloves garlic, minced
1 tsp fresh ginger, grated
any veggies you have in the fridge (cauliflower, broccoli, bell peppers, carrots, celery…. the list goes on!)
Sauté the onion, garlic and ginger in oil. Add the tofu and cook for a few minutes before adding all the veggies. Keep the heat high and cook the veggies for only a couple minutes to maintain their crispness. Add a few squirts of Braggs in the pan to season. Serve over brown rice and top with sesame seeds.
